Indonesian food series: Gulai Nangka recipe (Indonesian young jackfruit curry)
Gulai Nangka is a West Sumatran dish typical from Padang cuisine. If you’re not familiar with the concept, in Padang restaurants the customers choose from a selection of dishes on display (similar to a buffet-style). Typically customers don’t order, but rather the waiter brings dozens of dishes and the customers pay only for what they eat. Some of the most famous Padang dishes are rendang, balado and this gulai nangka recipe.
In this post, I will show you the gulai nangka recipe that we learned from Chef Hero on our cooking class in Warung Sunny in the beautiful tropical paradise island of Gili Air. While this is not a difficult recipe in any way, it is hard to find unripe jackfruit outside of Indonesia. I will give you some alternatives for that as well. This recipe is vegan and gluten-free, but it packs a ton of flavour, so it can cater to many dietary restrictions.

Indonesian gulai nangka recipe ingredients
1. Gulai nangka ingredients
- Young jackfruit
Cooking tip: if you buy fresh jackfruit, you’ll need to cut it and boil it for around 10-15 minutes before cooking it. An easy alternative is to buy canned unripe jackfruit, which is ready to cook. Otherwise, you can substitute it with any vegetable you’d like, such as squash, cassava or
- Coconut milk
- yellow bumbu
- shallots
- garlic
- ginger
- galangal
- star anise
- cardamom pods
- kaffir lime leaves
- daun salam (Indonesian bay leaves)
- tamarind juice
- salt
- palm sugar
2. Bumbu kuning ingredients
- 250g Shallot
- 125g Garlic
- 100g Fresh turmeric
- 50g Candle nut
- 1 tsp Pepper
- 1 tsp salt
- + galangal, ginger, lemongrass, coriander and cumin to taste
Instructions
- Heat up a bit of oil on a pan and sauté yellow bumbu together with the spices, shallot, garlic and leaves until fragrant. It shoult take around 3 minutes.
- Add the young jackfruit and chicken and mix.
- Add coconut milk, tamarind juice, salt and sugar.
- When it boils, lower the heat and let it simmer until properly cooked. You can serve it when the jackfruit is soft or leave it on a low simmer for about 2 hours.
